hey girl--what saved me for many years (before i went back to being vegan, of course) was a crock pot and a cook book of crock pot recipes. toss in meat and veggies (or whatnot) in the morning, and then ignore it all day. my kind of cooking :)

by the way, you have just fallen into the same rut of too much to do that we all have at some point. you are still the kind, generous, FABULOUS person and mother that i have known for...what, a bazillion years? you're too hard on yourself...especially since i consider a good day the one where hayley doesn't drive me to stuff her in the trunk of the car...hah

You are WAY too hard on yourself! So many of us stay-at-home moms get in the same rut. And its way harder when your husband isn't home at dinner time and it's just you and the kids. If that were me, I would just eat a bowl of cereal every night and be totally happy with it! My son has always been a wonderful eater - eats all of his veggies, LOVES all meat, esp steak. My 4 year old daughter on the other hand is TOTALLY the opposite! She wouldn't even eat baby food! Even now she will only eat carbs - crackers, cereal, chips, and popcorn. I'm tired of fighting with her to get her to eat right, so when she goes to the cupboard and grabs her favorite chips or fruit snacks, I don't get mad. I'm just secretly happy that's getting SOMETHING into her belly so she doesn't look like a skeleton!! Oh and she will ONLY drink milk from her "babba", which drives my ex-husband bonkers! Buy hey, I can't have her not drink milk when she doesn't get that much nutrition from the snack-type food that she eats! So do I feel like I could be doing a much better job with my daughter - HELL YES! Do I take the easy way out at times - YES! So I think I will join you in your task to become a better mom - although I think you're already off to a better start than I am!

I heard you can put pureed cauliflower into mac and cheese and it's undetectable. I've thought about trying that because they would eat mac and cheese all day if I let them!

That's a good rule about the 2 bites. thanks. :)

Good luck--but don't get discouraged if you fall of the wagon and feed them a corn dog every once in a while--you are not scarring them for life with one or two corndogs...or three...I gave up the bid for SuperMom long ago, and I only have ONE child! But I do think you are trying to make healthy, beneficial changes--just the fact that you care enough to try says a lot about you!

You are definitely NOT alone and you certainly do NOT suck. This Mommy gig is more difficult than I ever thought it would be! I feel inadequate too sometimes but my kids are healthy and happy, and that is what really matters so cut yourself some slack.

You're just in a rut, and now you are climbing out. Been there myself, so I know you can do it.
Make a rule in your home that they must take at least two bites before they say they don't like something.
If they like macaroni and cheese, add a little something extra in it or on top of it.

Oh No! I just bought 3 Family Size bags of Chicken Nuggets because they were on sale for $3.99 and they were Tyson!

You don't suck :) It takes every ounce of patience I have to teach my kids anything in the kitchen. There is always a mess and they never seem to clean up after. You know what? I actually have 2 of them cooking things like omelets, macaroni, spaghetti and YES Chicken Nuggets! LOL
